Opus Bar & Grill at Hilton Singapore is currently running a promotion with its premium butcher’s cuts for S$128++ (total for two persons) that comes with different types of meat and even wine. The package includes four types of meat as well as free-flow of select wines for two hours from Sunday to Thursday, or 50% off select wine bottles from Friday to Saturday.

The four types of meat that comes with the package comprise of the following:
- 500- to 600-gram Rangers Valley Angus OP rib
- 150-gram Margaret River wagyu flank steak
- 400- to 500-gram grain-fed beef short ribs with a marble score of three, braised with aromatic spices
- gourmet sausages masterfully grilled over Jarrah Wood for a deep smoky flavour on the open-flame charcoal grill
Excluding the sausages, that’s already 1.2kg of meat. While there are some bone-in cuts included in the weight, that’s an awfully lot of meat for two persons to have and offers tremendous value. The hotel invited me to check out the premium butcher’s cuts and indeed, we were not able to finish everything due to the sheer size of it all.
Of the four cuts of meat, I particularly enjoyed the grain-fed beef short ribs. The meat was unbelievably tender with the fibers collapsing easily with the stroke of my fork. I also liked the wagyu flank steak which came with just the right amount of smokiness. Make sure to try the sauces as well!

Aside from the premium butcher’s cuts, I also managed to try out some of the signature cuts in Opus Bar & Grill. These include:
- 1- to 1.2-kilogram U.S. whiskey-aged California tomahawk, 365 days grain-fed ($153)
- 800-gram Australian Westholme wagyu sirloin, marble score 4 ($138)
The tomahawk is theatrically presented. The meat is aged with whiskey and is fired up while serving with the meat dramatically bursting into flames. The taste is a mix of a distinct smoky flavor paired with alcohol. Due to the way it is presented, I thought there’s a bit of inconsistency in the done-ness. Some bits are almost charred while other pieces are a little rare for my taste. In contrast, I loved the juicy slices of Westholme sirloin and would recommend it if you’re a big group and looking to try another cut of steak. For a surf and turf experience, you can also order some lobsters to go along with it.
