Until 31st August 2023, Brasseire Les Saveurs in St. Regis Singapore is transformed into The Astor Grill; a pop-up restaurant inspired by the great chophouses of early 20th century New York. For both lunch and dinner, The Astor Grill presents its own menu featuring steaks as well as seafood.
Entering the restaurant, the look and feel is still the same as the Brasserie that I’ve grown quite familiar with. Given St. Regis’ New York heritage, the interiors as well as the dimly lit nature of the restaurant could very well fit nicely with a steakhouse concept.
Starters such as the Grilled King Prawns A la Plancha (S$39) with avocado, peach and beef heart tomatoes give a good prelude to the meal that’s to come. The prawns were plump, with the fruit mixture giving it a sweet juxtaposition.
Another starter I tried was the King Crab Salad (S$52) which was rather densely packed with shredded crab meat. The dishes I had at The Astor Grill were all rather big, and each one is best shared with a dining companion or a few.
As a steakhouse, it would perhaps be a shame to come here and never get to try any of the meats. The Astor Grill has at least 7 different cuts of beef to choose from. The selection ranges from primary cuts like rib eye, striploin and tenderloin to secondary cuts like skirt or rump.
If you are coming as a group of 3 or more and don’t know which cut to try, you can check out their Butcher’s Platter (S$200). Each serving comes with 250 grams of Striploin US Black Angus, 220 grams of Thin Skirt Australian Wagyu and 220 grams of Rump Cap Tasmania Angus.
The meats were grilled nicely and were delectably tender. We were made to choose our preferred steak knife prior to serving. In all honesty, any knife would have been good enough to slice the buttery texture of the steak. Of the three cuts, my favorite was the skirt. Despite being a secondary cut, I loved the amazing combination between lean meat and fat in the wagyu. Despite being just lightly seasoned with salt, the flavors simply exploded in my mouth with the wonderful contrast between the charred exterior and the aromatic and juicy interior.
While steaks are the specialty here, they do serve a variety of “alternative” mains as well for non-beef eaters. Options include Grilled Boston Lobster (S$88), Butterflied Spring Chicken (S$44) and Potato Gnocchi (S$32). Those who want to impress and are in a group of at least 4 to 5 people can considered the Grilled Whole Turbot (S$298). Weighing a massive 2kg, this flat fish is sure to generate oohs and ahhs especially as the chef presents the dish to diners through a dramatic unveiling with smoke billowing out of the lid.
Desserts are pretty affairs with the likes of a deconstructed Lemon Tart (S$22) served as a sphere with the lemon custard inside the firm casing or the Astor Tiramisu (S$22) which is also deconstructed with espresso-soaked ladyfingers, coffee gelato and crispy gold crumbs surrounding the cream.
Among the sweet endings, I was particularly more inclined towards their Sticky Toffee Pudding (S$22). The rather light and bouncy pudding was a highlight and you’d want to smother as much of the accompanying burnt toffee cream on it for added sweetness.
