I still recall my first Christmas dining experience at St. Regis Singapore – 2008 in LaBrezza. Throughout these years, the property has consistently come up with imaginative festive delights during the most wonderful time of the year and 2015 is no exception. I was invited to preview some of the Christmas and New Year offerings which are set to color the menus of LaBrezza, Brasserie les Saveurs and Yan Ting in late December and for New Year’s.
In true St. Regis style, it was a decadent affair right from the very beginning. The Foie Gras with Boston Lobster Terrine served with date and shallot compote, bitter cocoa sauce and lobster essence set the tone for the dinner. With my memory still vivid of the excellent foie gras from my Sunday brunch experience at Brasserie les Saveurs, I almost felt guilty for letting the lobster within feel like an afterthought to the delicate texture and buttery flavor of the terrine.
We were then served the Polenta Ravioli with Portini Mushrooms. It was one of my favorite dishes of the night, with the richness of the slightly creamy filling teasing me with every bite. I normally prefer my ravioli with tons of rich tomato sauce but the black truffle espuma that it came with was also fitting and surprisingly did not overpower the whole dish given that truffle has a tendency to do just that.
Both the Foie Gras and the Polenta Ravioli will be available in LaBrezza’s 6-course New Year’s Eve dinner on the 31st of December which goes for $208++ per person
The Grain-Feb Angus Beef Tenderloin came medium well / well done. While I generally prefer my beef medium rare, the tenderloin was still surprisingly soft though not as juicy as I would have iked. I was also initially unsure about the idea of red meat and seafood in one dish but it worked in the end due to the versatile sauce perigord.
The Beef Tenderloin will be available during Brasserie les Saveurs’ Christmas day brunch on 25th and 26th December which will go for $218 with free flow of R de Ruinart, $198 with free flow of juices and $178 with coffee and tea
The Oven-baked Black Cod with Walnut and Fresh Herbs Crust, Castelluccio Lentil Puree, Asparagus Tips and Confit of Cherry Tomatoes and Avruga Caviar at first glance, seemed to be a dish where “too many things are going on at the same time.” But take the ingredients separately and it actually makes for a fulfilling main dish. It would be a tragedy however to make the mistake of separating the soothing lentil puree, which compliments the fleshy cod meat and the crunchy textures of the walnut bits.
The Oven-baked Black Cod will be made available in LaBrezza’s 6-Course Christmas Dinner on the 24th and 25th of December which goes for $178 or $198++ per person with wine pairing
A festive meal at a distinctly American brand such as St. Regis would not be complete without the turkey and indeed, the Whole Roasted Turkey with Buttered Brussels Sprouts, Glazed Chestnuts, Caramelized Yam, Cranberry-Orange Compote and Giblet Gravy immediately took me back to my student days in the United States when I used to celebrate holidays such as Thanksgiving. I never quite managed to sample a similar type of roasted turkey from that time, until this tasting that is. The marvelously-prepared cranberry compote transformed the dish into something truly American and I could not help but go for second servings. I had the breast portion which is normally the least appetizing part but it still ended up flavorful and tender. Pretty much everyone in the table also enjoyed the caramelized yam, sweet and which carried a distinct homemade feel.

We also got to sample some seasonal goodies which will be made available at the La Patisserie from the 1st of December onwards (pre-orders accepted). We had some log cakes and Christmas Stollen complette with dried tropical fruits.
