There are still 51 days until Christmas as of this writing but hotels across Singapore have been quietly preparing their festive offers for 2017. If you are already wondering where to bring your clients, family and friends for that Christmas buffet, brunch or dinner; this mini-guide across some of the most well-known hotels in Singapore offers a snapshot of what’s on offer for the yuletide season this year.

This coming festive season will see a lot of creative flavors – from the likes of Tandoori and Laksa Turkey interspersed with perennial favorites such as Goodwood Park Hotel’s Slow-Roasted Iberico Pork Belly (in my opinion, the best Christmas dish to have this year) and haute dining such as the special set menus from Brasserie les Saveurs at St. Regis Singapore and La Dolce Vita at Mandarin Oriental Singapore. Capella Singapore
The Christmas promotions at Capella Singapore in 2017 will carry a fairytale theme called “Once Upon a Christmas.” The venues will be transformed into kids-friendly affairs with a turkey carving station, the gluten-free Vanilla-Greek Yogurt Log Cake with Lemon Verbena Curd, cocoa nibs and flaxseed genoise, and more. The Chef’s Table by Capella Singapore will be open for Private Brunch Affair at any time and any day in December. Recreated from a Sunday Brunch atmosphere, diners can choose to enjoy their intimate celebration with great chef-guest interactions. Highlights include the Baked Capella Christmas Turkey with Corn Bread Stuffing, Orzo Risotto with Mushrooms and Pumpkin, Foie Gras Custard with crouton of Gingerbread and Port Wine Reduction, Boston Lobsters, Creamy Pumpkin Soup and more.

Conrad Singapore
The property has always been known for its Christmas log cakes. This year, it debuts luxurious flavors such as the Macchiato Whisky Log and the Royale Hazelnut Crunch Log. From 1st December 2017, Oscar’s will also be introducing festive items into the buffet such as the Honey and Pineapple Glazed Boneless Smoked Ham, Whole Turkey with Stuffing as well as the specialty log cakes in the dessert section. The buffet from 23 to 25 December will also feature a live outdoor BBQ station.

Crowne Plaza Changi Airport
This property has a distinct emphasis on turkey this festive season with Azur rolling out the likes of Black Truffle Roast Christmas Turkey which is available both as a takeaway item and as a dish during the festive buffets. Other highlights include the Crispy Pork Knuckle, freshly shucked oysters as well as seafood on ice. From 17th to 28th December, the venue will also host kids-friendly activities such as Build a Gingerbread House, Mocktail Making, Decorate your Gingerbread cookies, Christmas Tree Colouring Contest, Design Your Cupcakes. Santa Claus will make a special appearance at Azur during Christmas Eve Dinner on 24 December and Christmas Day Brunch on 25 December to spread the holiday cheer.

Fullerton Hotel Singapore & Fullerton Bay Hotel Singapore
All of Fullerton Hotel Singapore’s dining outlets will host their own festive promotions with Town Restaurant being the first to kick it off on the 10th of November. The hotel will have its annual Christmas light-up ceremony on the 24th of November followed by a charity cook-off dinner featuring the GM, Giovanni Viterale who himself comes from a culinary background. Specialties during the festive season will include the likes of Wild Mushroom Terrine, and Duck Roulade with Hazelnuts and Prunes; a smorgasbord of fresh ocean spray; a carvery station featuring Manuka and Soy-glazed Champagne Ham with Spiced Pineapple Chutney, and Traditional Turkey with Yorkshire Pudding.
Dates: From 11th November 2017 to 1st January 2018

Goodwood Park Hotel
Goodwood Park has the best festive dish I’ve tried this year. I can’t recall how many times I’ve gone back for a serving of the Slow Roasted Ibérico Pork Belly with Crackling, Pickled Cabbage, Apple Sauce and Pork Jus (S$320 for 6 to 8 persons). Done to perfect succulence with crisp golden-brown crackling, the pork is actually roasted for three and a half hours with sherry vinegar, white wine and mirepoix before serving. The ibérico pork belly is paired impeccably with zesty white cabbage pickled with honey, Pommery mustard and grated apples.
While the pork belly is probably enough to justify a visit to Goodwood Park Hotel Singapore for festive dining, durian lovers will also have a feast with the Goodwood ‘Mao Shan Wang’ Durian Christmas Log Cake ($77 for 1kg), a premium take to the hotel’s knack for doing fantastic durian desserts.

Holiday Inn Singapore Atrium
This property’s festive menu is another one I have personally tried and one of the highlights here are the plump scallops that are going to be part of the festive buffet. For something that is locally-flavored, the Salted Baked Laksa Turkey is slow-cooked for 4 hours before reaching a juicy and succulent texture. The festive takeaways are available from 1st November – allowing folks to have an early festive season in the comfort of their own homes.

Holiday Inn Singapore Orchard City Centre
The property will have a notable Asian-themed festive offering with the likes of Tandoori Turkey and Szechuan Turkey available in the buffet or as part of the festive takeaways. Tandoor, the award-winning Indian restaurant, will also offer a special festive menu with specific Christmas Eve and Christmas Day menus.

Hotel Indigo Katong Singapore
For those looking for a Peranakan-themed Christmas, Baba Chews presents a compelling option in what it calls Tok Panjang (Peranakan for feast) during the yuletide season. I personally tried the festive menu at Hotel Indigo Katong Singapore and the star dishes in my view are the Salted Vegetable Duck Xiao Long Bao and the Crackling Pork Belly Panggang (S$78++). Overall, a Peranakan-themed property may not be top of mind when it comes to Christmas dinners but if you are looking for something different this year, this is the place to go.

Hotel Jen Tanglin Singapore
This property is one of the earliest in Singapore to launch its festive buffets to cater for the Christmas season. The Festive Seafood Buffet at J65 starts on the 1st of November and will showcase the likes of Snow Crab on ice, Seafood Thermidor, Grilled Baby Lobster infused with Taragon, Whole Baked Norwegian Salmon and Singapore Chilli Crab. Jen’s festive carvings includes signature roasted turkeys, Honey Glazed Virginia Ham, Roasted Pork Knuckle, Slow Roasted Prime Rib Beef and a tantalising array of festive desserts. Fin de Claire Oysters, Boston Lobsters and Tandoori Turkey will be served from Fridays to Sundays only.

InterContinental Singapore
Ash & Elm at InterContinental Singapore will herald the hotel’s Christmas menu from 20th November onwards. While there will be curated menus for Christmas eve / day and New Year’s eve/day, the festive takeaways are also worth mentioning. I personally tried the Roasted Kurobuta Pork Belly (S$148++ for 2kg) and I would have to say this is probably the star dish of the property for this festive season. For sweet endings, you can’t go wrong with Chef Ben Goh’s creations. I particularly liked the Madeleine Croquembouche (S$32++ per 350g) which comes in 4 flavors such as strawberry, blueberry, passionfruit and pistachios.

Mandarin Oriental Singapore
All the dining outlets at Mandarin Oriental Singapore will be offering festive menus during the 24 and 25 December as well as 1st of January, from a Christmas-themed afternoon tea at Axis Lounge to an elaborate Christmas Day Sunday Brunch at Melt Cafe that will include an outdoor BBQ station. For a different take to Christmas dining, Cherry Garden will be offering a special Christmas dimsum brunch for both Christmas Eve and Christmas Day.

The property will have a diverse festive offering this season, reflecting the cuisines housed in its dining outlets. For Pan Pacific Singapore, the festive season starts on the 13th of November at Edge. A glorious festive spread at the seven live stations ranging from house crafted Christmas charcuterie such as Foie Gras Torchon and Christmas Cured Meat platter will be offered for starters. Be spoilt for choice at the Carving Station with tender and luscious Traditional Roasted Whole Turkey, Glazed Champagne Ham and Whole Roasted Moroccan Spiced Baby Lamb. Conclude the spread with a magnificent display of Christmas sweets including their new creation, the Chendol Log Cake.

Both Marriott Cafe and Pool Grill will be offering something for the Christmas season. If you prefer buffets, Marriott Cafe will be offering its Christmas-themed spread from 1st December onwards. Expect delicacies such as Roast Turkey with Dried Fruits & Chestnut Bread Stuffing; Roast Australian Beef; Pork Saddle Stuffed with Prunes & Pancetta; Bourbon & Honey Glazed Leg Ham; Lobster Bisque, and more. Western highlights include Lobster Thermidor; Oyster Florentine; Gratinated Prawns; Braised Beef Bourguignon; Risotto with Lobster, Crab, Asparagus & Champagne; Pan-fried Duck Foie Gras with Fig Jam & Port Wine Reduction, and more.
Pool Grill on the other hand will be offering set menus that are available only on the 24th and 25th of December. Once again, each of the dining outlets at St. Regis Singapore will be holding something special for Christmas this year (including the Cantonese restaurant, Yan Ting). At the flagship dining outlet – Brasserie les Saveurs – expect premium main courses such as Oven-baked Lamb Rack and Grilled Jumbo Tiger Prawns. Over at Yan Ting, the Christmas Eve Dinner will include mouthwatering dishes such as Double Boiled Fish Maw Consomme and Braised Noodles with Boston Lobster in XO Sauce.

The Line has one of the most popular buffets in Singapore during the festive season and this year will be no exception with an elaborate menu that’s customized during December. For Christmas dining with a slight twist, Shang Palace (the Chinese restaurant) will offer a special 7-course menu just for Christmas and New Year. Guests can savour signature dishes like Braised Birds’ Nest Broth with Shredded Fish Maw and Alaska Crab Meat and more. Over at the new Japanese restaurant, Nami, there will be an elaborate 6-course surf and turf or 7-course omakase dinner served for Christmas.

The Westin Singapore’s location right in the heart of Singapore’s CBD makes it a convenient place to host office Christmas parties. This year, all of the hotel’s dining venues have prepared something new for the festive season. Seasonal Tastes will have special buffet spreads on Christmas Eve, Christmas Day and Boxing Day. Cook & Brew in particular, has rolled out a new menu in November to coincide with the festive season with heartwarming dishes such as Nova Scotia Lobster and Avocado Toast topped with Ossetra Caviar and Peanut Butter and Chocolate Ice-box Cake.
