At this time of the year, people start scouting for the best buffets, brunches and dinners for Christmas. This has become something of a yearly tradition here in Singapore especially with hotels and top restaurants scrambling to outdo one another in terms of presentation, value and taste. This is no exception for the year 2018. This comprehensive guide runs you through some of the most well-known hotels and restaurants in Singapore and what they have in store for the yuletide season.

InterContinental Singapore
Ash & Elm at InterContinental Singapore will be featuring festive favourites and delightful gourmet presentations this yuletide season. Festive additions to the buffet will include charcoal-grilled beef tenderloin with port wine sauce, roasted tom turkey with citrus fruits, and honey ham and spinach flatbread. For the special champagne brunch, diners can look forward to unlimited servings of premium seafood on ice, luscious caviar, festive charcuterie and cheese, and special Christmas a la minute small plates of pan-fried foie gras with cranberry chutney and brioche chips; and steamed cod with chargrilled leek and winter truffle sauce complemented with unlimited Taittinger Champagne.

Singapore Marriott Tang Plaza
Marriott Cafe and Pool Grill at Singapore Marriott Tang Plaza Hotel will both offer something special for the festive season. Buffet lovers can delight on Roast Turkey with Chestnut Bread Stuffing; Slow-roasted Australian Beef Prime Ribs; Maple Gazed Leg Ham; Pan-fried Foie Gras with Chutney, Relish & Brioche; Milanese Style Lamb Chops with Lemon & Herbs; Bacon Wrapped Chicken Ballotine with Creamy Kale, and more at Marriott Cafe. The hotel’s traditional log cakes will also make an appearance over at the dessert section. Over at Pool Grill, a dazzling set menu will be made available on the 24th and 25th December.

Sofitel Singapore City Centre
Racines, the French-Chinese restaurant in Sofitel Singapore City Centre will this year roll out its festive dishes in two formats. First as a 5-course set menu that is available throughout December (with the exception of 24th and 25th December) and the second through an Art de Noel Christmas eve dinner buffet and Christmas day brunch buffet. The 5-course set menu will include turkey, Greek seabass fillet seared to perfection with pain d’epice emulsion or spiced Wagyu flank steak prepared to one’s desired doneness. A steamed Christmas mixed fruit pudding with cognac infused crème anglaise and Tahiti vanilla ice cream caps off the meal on a sweet note.
The buffet on the other hand will feature all-time favourites comprising honey-roasted ham served with caramelized pineapples and orange glaze, as well as an Asian twist with Racines’ Chinese brigade cooking up a special “Kong Bak Pau” braised pork belly with light garlic aioli.

Hotel Fort Canning
The Salon at Hotel Fort Canning will be holding special festive-themed buffets on the 24th and 25th of December 2018 replete with flavors of the season. Dishes to look out for include the Roquefort Pear Salad, Thyme Roasted Butternut with Feta and Apricot Couscous, and Smoked Boundary Duck Salad with Baby Potatoes and Scallions for starters. For seafood lovers, there’s freshly-shucked oysters, New Zealand Green-lipped Mussels, Pacific White Clams and more.
There will also be a carving station where their chefs will dish out smoky hunks of Roasted Herb-crusted Milk-fed Chump of Lamb, 12-hour Slow Glazed Maple Honey Mustard Gammon Ham, and Satay Roast Turkey – newly-introduced this season. Look forward to fine delicacies such as Braised Bordeaux Demi-glace Beef Cheek with Caramelized Baby Onion and Leeks, Pan-seared Prawns with Onions, Capsicums and Moet & Chandon Champagne Cream, Roasted Apricot-glazed Pork Loin stuffed with Spinach and Goat Cheese, and Grilled Seabass Fillet with Thai Citrus Lime Beurre Blanc.

Fullerton Hotel and Fullerton Bay Hotel
The Fullerton Hotel is usually one of the first hotels to offer its Christmas dining experience and this year, it’s no exception. As early as 5th November, guests can partake in some festive eats across the multitude of F&B outlets across the two hotels. The Christmas delights will culminate on the 24th and 25th December with a special Christmas brunch and dinner buffet at Town Restaurant. Spanning over 20 stations, the buffet will feature the likes of Hokkaido Scallops, Porcini Mushrooms and Truffle Risotto, Traditional Slow-Roasted Turkey and Eggnog Shooters.

Park Hotel Clarke Quay
Porta at Park Hotel Clarke Quay will feature an exclusive Christmas menu on the 24th and 25th December that will consist of 4 courses. Starting with plump sous vide scallops, PORTA’s festive menu transitions into a classic bowl of French Onion Soup with cheese toast, beautifully crowned with sprinkles of Avruga caviar. For the main, guests can choose between a Beef Brisket sous vide for 12 hours and roasted to a smoky char, paired with red wine sauce or; an Atlantic Halibut confit, baked golden and paired with lemon butter sauce and herbed crust made from a secret selection of 6 different herbs and spices.
Over at Cocobolo, dinner buffet will be served from 21 to 24 and 28 to 31 December from 6.30pm to 10.30pm. The spread will include an extensive selection of seafood and meats including, lamb rack, pork belly and the Christmas classic, turkey and an array of festive desserts.

Mercure Singapore Bugis
Royale at Mercure Singapore Bugis will have a Christmas circus-themed buffet this year with over 40 yuletide dishes to choose from. Highlights will include the Truffle Cheese Fondue, 7-spices Turkey with Homemade Chili Sauce and Port Wine Glazed Rack of Lamb. There will also be a live outdoor BBQ station while kids can try a hand in DIY gingerbread man making at the dedicated live station.

Pan Pacific Singapore
As is the case each year, all hotel-managed dining outlets in Pan Pacific Singapore will prepare something special for the coming Christmas season. At the center of it all is Edge and its popular buffet. This year’s festive line-up will include Pineapple Glazed Bone-in Gammon Ham with
Honey and Clove and Oven Roasted Mustard Angus Striploin. For cheese lovers, there’s the Farmer’s Cheese Theatre showcasing over eighteen varieties of artisanal European cheeses. End the meal with a dazzling display of classic Christmas sweets including Christmas Pudding, Panettone and Vanilla Spice Rum entremet. Over at Hai Tien Lo, elements of Christmas will be inserted in the special festive menu such as Braised Parma Ham in Supreme Stock accompanied with Turkey Wanton, Panfried New Zealand Rack of Lamb in Black Pepper Sauce.

Carlton City Hotel Singapore
There will be a palpable Asian theme in the festive buffet at Plate (level 3 of the hotel). Epicurean highlights include Baked Irish Beef Pie, Lamb Kofta Curry with Chickpeas, Assorted Seafood with Lemongrass Bouillabaisse, BBQ Teriyaki Baby Pork Ribs, and Seared Salmon and Prawns with Sesame Shoyu; and à la minute pasta station for customised pasta dishes and a dedicated Japanese counter of fresh sashimi, sushi and light bites. Local delicacies will also line the buffet counters, including the popular Singapore Chilli Crab with Fried Man Tou, Wok-fried Black Pepper Crab, Singapore Laksa, and Salted Egg Yolk Prawns. Conclude the festive indulgence on a sweet note with classic Christmas treats that include an assortment of Christmas Log Cakes and Festive Pastries. Food Exchange (located on level 2 of Novotel Singapore on Stevens) offers daily festive buffet lunch and dinner from 15th November to 1st January 2019. Savour chef’s signatures such as Gravlax, Traditional Roast Turkey, Honey Studded Ham and a wide range of Christmas desserts, on top of the daily international buffet with fresh seafood on ice.
Winestone, located beside Mercure Singapore on Stevens, will offer two luxurious platters – Noel Platter (24th-25th Dec 2018) and Alpha Platter (31st Dec 2018 – 1st Jan 2019), featuring highlights such as Foie Gras, Lobster Gelee with Avocado Mouse and Sea Urchin, and Cote De Boeuf. The Festive Platters is available at $158++ and serves 3 to 4 persons.

Both The Knolls and Cassia at Capella Singapore will offer special dining experiences on the 24th and 25th December with the likes of Halibut Confit with Citrus Junos (The Knolls) and Braised Bird’s Nest with Crabmeat (Cassia). Apart from this, Chef’s Table will also be offering a special afternoon tea with a mix of savories and sweets such as Tarragon Roast Turkey Sandwich with Smoked Almond and Endive, Foie Gras Mousse on Cranberry Pistachio Sables topped with Caramelised Vanilla Apple, Panettone French Toast, Almond Marzipan Stollen and more.

Over at Publico Ristorante, their signature à la carte Italian highlights will come with a Christmas twist, showcasing the likes of the Red Prawn Tartare, Ricotto & Spinach Raviolo, Housemade Wholemeal Pacchero Pasta and a sumptuous Josper Grilled Pork Secreto. At Marcello, delightful treats will be available such as a Crêperie Station, Caramel Popcorn, Mulled Wine and Freshly Baked Christmas Cookies for a final sweet touch

One of the most compelling buffet restaurants in the east – Azur – will roll goodies such as Herb Crusted Beef Ribeye and Crispy Pork Knuckles as well as Asian favourites such as Sambal Stingray, assorted Satay with peanut sauce, Singapore Laksa, Wok-fried Mee Goreng with Seafood, Kim Chi Beef Stew and Crispy Chicken with Prawn Paste (Har Cheong Gai) for the spread throughout December. On Christmas Day, Azur presents a special menu on our seafood crustacean bar with freshly shucked oysters served with Bloody Mary Shooters, Tequila with Bacon Powder and Lime Zest, Benedictine and Smoky Tomato and Lemon Verbena Ice Jelly; Snow Crabs, Peruvian Scallops, Lobsters, Baby Crayfish, Green Lip Mussels and more.

On Saturdays, Thai-Style Live Black Mussels ($18++), Assam Curry Turkey Fricassee ($22++) and Egg and Avocado Toast ($16++) will be available on ala-carte basis while on Sundays, all-you-can-order hot mains cooked a la minute such as the Turkey Breast Assam Curry, Barramundi Mee Goreng, Yakitori Panggang and Har Cheong Gai with Buah Keluak Waffle will be made available.
